How to Pick Bananas to Make Banana Bread:

Here’s my go to secret… I get mine from the freezer! My family eats bananas on the regular, however, we don’t always get to them before they have over ripened. Fear not, we simply place them into the freezer and tell them not to worry. Heads up, they peels turn a darker color once frozen. Don’t throw them out!

When the banana ripens, or begins to turn brown and soft, the sweeter they will be. If you chose to start with fresh bananas, briefly examine the banana stand to find the ones that are yellow with brown spots. While my mother-in-law prefers to eat her bananas still slightly green and firm, I go for the banana that has begun to speckle in the first place knowing that those sweet babies will soon find their new home in my freezer.

  • Pay Attention! When preparing to make homemade banana bread, remove the frozen bananas at least an hour in advance to thaw. I like to sit them in a glass bowl on top of my stove.

Simple, Easy, Effortless Banana Bread Recipe:

Start with preheating your oven to 350F. Then simple begin by combining the six first ingredients on the ingredients list into a large bowl. Mix them together well making sure all the dry ingredients are incorporated.

  • You can sift your ingredients here first if you’d like to ensure that all your dry ingredients are well combined and break up any lumps. It also helps create a lighter more delicate structure to your baked goods.

Here is also where you can adjust your spices cinnamon and nutmeg to your preference. You can also choose to omit the nutmeg if you just don’t have it in your pantry. I personally always make a double batch so that I can give some away. I actually call it “Friendship Bread” and like to put an extra loaf in a gift bag. Dairy Free Ingredients to Make Banana Bread:

Using a medium bowl, combine the remaining 4 ingredients together. First, add the thawed and peeled bananas to your bowl.

  • No waste: I’m a plant mom as well so I actually save the banana peels, place them in my largest bowl in my sink, and run water over them until it reaches the top. I then let them sit for a few hours to overnight and use it to water my plants!

Now using what you have, a potato masher, pastry cutter or just a fork, mash the bananas until they resemble small lumps. Then add in the applesauce, sugar and vegetable oil to the mashed bananas. Stir until mixture is completely combined. You can use whatever applesauce you have on hand; however, you can see that I used no sugar added regular applesauce.

Easy Moist Banana Bread Batter:

Gather your large bowl used for your dry ingredients and make a well in the center. I accomplish this by pushing the flour mixture to the sides making it look like a funnel to pour in your moist ingredients.

Pour in your banana mixture into the well. Using a wooden spoon or spatula, gently combine all ingredients just until combined. Batter will look lumpy, that’s okay! Now gather your pans and get them sprayed with butter.

How to Make Easy and Healthy DAIRY FREE Banana Bread Using ONLY 10 Ingredients:

Gather your dairy free banana bread batter, your prepared baking pan, and my favorite tool for this job….an Ice Cream Scoop! My kids love to snack, which first inspires me to make the banana bread. Now I need them to be easy to eat as well. My girls don’t quite enjoy that freshly sliced piece of banana bread that I drool over while sipping my coffee, however, they do enjoy mini muffins.

I gather my mini muffin pan along with my Ice Cream Scoop and get to work. I love using my smaller scoop to fill each muffin spot with one scoop. Don’t worry about it being messy and not coming out in a perfect shape. The organic shape is perfect for your homemade banana bread.

  • My secret is to sprinkle cinnamon over top the mini muffins before going into the oven to add one more burst of flavor and helps give them that banana bread look.

Place your pan into your preheated oven and bake for 23-25 minutes or until a toothpick inserted in the center comes out clean. Also, a visually aide I use to identify if the muffins are done is when they develop a golden color. Don’t be afraid to pop out one to test as well. Split it in half, add butter, drool….okay maybe hold off on the drool.

  • As I said earlier, I really enjoy having a fresh slice of buttered banana bread with my coffee. So, I like to use the extra batter I have and make a Mini Loaf of bread as well. Mini loafs take around 45-50 minutes to fully bake but worth the extra wait.

FINAL Step to Making Easy Banana Bread:

You did it! Your banana bread has baked and ready to come out of the oven. Place your whole pan on a cooling rack and allow the pan to completely cool. Then simply flip it over and arrange your mini muffins directly onto the cooling rack to finish cooling now out of the pan. Repeat once the mini loafs are done.

From here, I place the mini muffins in a freezer bag to keep them from drying out and to prevent molding. Also, because they don’t last long at my house! I like to take the extra mini loaf and place it in a decorative treat bag. I love using a treat bag to fit the season! It’s something my mom always did so I feel it’s a little of her when I follow traditions.

  6. Bake mini muffins for 23-25 minutes and mini loafs for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in pan on a wire rack for 10 minutes. Remove from pan and cool completely. Enjoy!

*Tip: Use fresh or frozen bananas! Take out frozen bananas at least an hour in advance to thaw.
