Don’t have eggs or butter? Craving something sweet and moist but have nothing on hand? Want to avoid dairy while increasing your fruit intake? Then you have discovered the recipe for you! My recipe provides you with pantry alternatives to easily make healthy moist banana bread dairy free.
Ingredients
- 2 C A/P flour
- ¼ tsp iodized salt
- ½ tsp baking soda
- 1 ½ tsp baking powder
- 1 ½ tsp cinnamon
- 1/8 tsp nutmeg
- 5–6 bananas
- 4 oz applesauce
- 1 C granulated sugar
- ½ C Vegetable Oil
Instructions
- Preheat oven to 350F. Prepare your baking pans by greasing. Set aside.
- Combine the first 6 dry ingredients together in a large bowl. Stir until well combined. Create a well in the center of the flour mixture. Set aside.
- Add your peeled bananas to a medium bowl. Using a potato masher or fork, “mash” your bananas until they resemble small chunks.
- Add the eggs, sugar, and oil to the banana mixture. Stirring until well incorporated.
- Add the banana mixture into your flour mixture all at once. Fold in until well combined. Batter will appear lumpy.
- Bake mini muffins for 23-25 minutes and mini loafs for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan on a wire rack for 10 minutes. Remove from pan and cool completely. Enjoy!
Notes
*Tip: Use fresh or frozen bananas! Take out frozen bananas at least an hour in advance to thaw.
*Tip: Combine eggs together in a bowl first “to scramble” before adding to banana mixture to ensure an even blend.
*Tip: Sifting your dry ingredients first allows you to break up any clumps and provides a fluffier texture.
